The Jinan Highland Unjangsan Gorosoe Festival is held as the cold winter passes and spring approaches, coinciding with the time when Jinan Highland Unjangsan Gorosoe (maple sap) begins to flow. Jinan Highland Unjangsan Gorosoe, a natural beverage that can only be consumed in spring, primarily comes from gorosoe groves at an altitude of 600m or higher. Gorosoe sap is produced when the roots of the gorosoe tree absorb water from the ground during low-temperature nights, filling the stem with sap. As night transitions to day, the temperature rises, and sunlight hits the tree, the moisture and air inside the stem expand, and the pressure decreases, causing the moisture within the gorosoe stem to attempt to escape. When a hole is drilled, gorosoe sap emerges from it. The greater the daily temperature difference, the more sap can be collected. Jinan Highland, being the only highland region in South Korea, has a significant daily temperature difference, providing an ideal climate for harvesting high-quality gorosoe sap.
